Excelso Coffee Roasters know what floats our boat. And no, we're not talking the principle of bouyancy. 

When we reached out to Josie and the team for coffee offerings, they knew just what got our motor running. Colombia, Not just any Colombia, but one of Colombia's star producers, of whom we are huge fan boys.

For those who are new, Allow us to introduce Diofanor Ruiz. Diofanor was the first (of only 2) producer we've featured twice, with this being the third. To understand why we're such fans of Diofanor, take a look at our first and second collaborations featuring Diofanor.

About this lot (Words by Cofinet)

This coffee was grown by Diofanor Ruiz at the farm La Divisa. This coffee was exposed to a dry aerobic fermentation of 24 hours, later placed inside grain pro bags for 50 hours maintaining a temperature
below 22 oC. Later placed on raised beds until 11% moisture content is achieved.
This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
